Spiced Squash Waffle Recipe

Here's  a quick healthy waffle recipe. Here in the Philippines we don't have pumpkin so I substituted it with our very own squash. Here's the original recipe for your reference.


Spiced Squash Waffle Recipe


Ingredients:
  • 1 cup squash puree
  • 1 1/4 cups buttermilk or fresh milk
  • 1 egg
  • 1/4 cup melted butter
  • 1 3/4 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg


Instructions:
  1. In a medium mixing bowl, combine the squash puree, buttermilk, egg, and melted butter. Stir to combine.
  2. In a large mixing bowl, whisk together the remaining (dry) ingredients. Add wet ingredients to dry and stir just until moistened.
  3. Preheat waffle iron. Spray hot waffle iron with oil or non-stick cooking spray or use silicone brush to spread some oil, spoon batter to waffle iron, and cook until done. Follow your own waffle maker instructions.
  4. Serve waffles plain, with maple syrup, and/or whipped cream and powdered sugar- depending on your  preference.

Scoop 1/4 cup batter into the waffle maker.

I am using the Asahi waffle maker -available in Robinson's Tacloban Appliance Center.

Notes:
  1. Leftover waffles can be frozen until needed. Re-warm in the toaster on low.
  2. To make a buttermilk substitute by combining 1 tablespoon of lemon juice, calamansi juice, or white vinegar with enough milk to equal 1 1/4 cups.

Unfortunately I missed one recipe at the end of the year. However, it was still an amazing feat to have made it through 49. Insert "proud moment" here. So what's next for 2016? I'm heading towards savory dishes. Spices and such, here I come!

Easy Peanut Butter Cookies

Got extra peanut butter? If yes, you should definitely make this easy peanut butter cookies. As a quick-fix afternoon snack for my two-year-old I let him help me make a batch of peanut butter cookies. The original recipe calls for only three ingredients, but I opted to add wheat flour and oatmeal for more fiber. This recipe is so easy, I let my son do the initial mix. He was so excited when I was setting up that I handed him the whisk and rubber spatula. 

Easy Peanut Butter Cookies

Ingredients:

  • 1 cup chunky peanut butter (you can also use the creamy kind)
  • 1/2-3/4 cup sugar (either brown or white will do)
  • 1/4 cup wheat flour
  • 1/4 cup oatmeal (I used the instant kind)
  • 1 egg
  • 1/2 tsp vanilla extract

Instructions:

  1. Heat oven to 350°F or 177°C.
  2. Mix all ingredients in a medium sized bowl with a wooden spoon or a rubber spatula. 
  3. Scoop a 1 Tablespoon sized cookie dough on your prepared pan with parchment. 
  4. Bake for 12-15 minutes. 
  5. Let cool in a wire rack- be mindful that as the cookies cools it hardens a bit.
  6. Sit back and relax, it's that easy.
Now take a piece of cookie or two, and pair it with milk or ginger tea.

The bits of peanuts adds a crunch that's just right.



Note: I am using the tabletop Imarflex electric oven, so that's 2 batches of baking. 15 minutes was enough per batch which yielded about 16 cookies.
